Transform the ordinary omelette into a sandwich by adding spinach, parsely and chives to the eggs before cooking.

Ingredients

8 eggs
3 Tbs. water
Salt and pepper
1/2 cup freshly cooked, well-drained, chopped spinach
2 Tbs. chopped parsely
1 Tbs. chopped fresh chives
4 to 5 Tbs. butter or margarine
4 heated rolls or buns
4 tomato slices
8 slices cooked bacon

Directions

1. In large bowl, combine eggs, water, salt and papper. Beat lightly with fork. Stir in spinach, parsely and chives.

2. Heat margarine in heavy 10-inch skillet until it sizzles, tilting pan to coat bottom and sides. When hot, pour in egg mixture.

3. Cook over low heat, sliding pan rapidly back and forth over burner, keeping omelette in motion to avoid sticking. Slip a spatula under edges and let uncooked portion flow into center of pan. Cook until top is set and bottom is golden.

4. Slide omelette onto platter. Cut into 4 portions. Arrange each portion on bottom half of a heated rool. Top each with tomato slice and 2 strips of crisp bacon. Cover with tops and serve.
